Lean manufacturing is one of the most preferred production models. It is a mode of production that entails elimination of all waste in developing an operation that is faster, dependable, and that produces higher quality of goods and services (Pettersen, 2009). The bedrock of lean manufacturing is ensuring that all the steps that lead to waste in the production process are eliminated in a way that every step adds more value in the production process (Holweg, 2007). It also calls for continuous improvement of the production process in order to increase quality. This study looks into how lean process can be integrated in the operation of a restaurant.
